EASY DESSERT 
2 env. plain gelatin
1 c. drained crushed pineapple
1 c. juice (pineapple)
1 c. sugar
1/2 tsp. salt
2 tbsp. lemon juice
1 lg. Cool Whip
1 angel food cake mix
1 c. coconut, flaked

Dissolve gelatin in 4 tablespoons of cold water. Add 1 cup boiling water and lemon juice, pineapple juice, sugar, salt, and pineapple. Mix well. Refrigerate until partly congealed. Fold 1/2 of Cool Whip into mixture. Cut cake into bite size pieces. Line 9 x 13 inch dish with cake. Alternate layers of cake and mixture. Top with Cool Whip and coconut.
