GOLDEN LAYER CAKE 
2 1/4 c. cake flour
2 1/2 tsp. baking powder
1 1/2 c. sugar
1 tsp. salt
1/2 c. shortening
1 tsp. vanilla, lemon or almond flavoring
1 c. milk
2 med. eggs

Sift together flour, baking powder, sugar and salt. Add shortening, flavoring and 2/3 cup milk. Beat 2 minutes. Add remaining 1/3 cup milk and eggs. Beat 2 more minutes. Bake 30 to 35 minutes at 350 degrees in greased and floured layer pans.

This finely textured spongy cake tastes a lot like Pepperidge Farm's layer cake and is especially good when iced with a creamy chocolate frosting and refrigerated. I got it from a cake flour box years and years ago.
