This is my alternative to appease my peanut allergic son... yum! 1/2 cup (1 stick) butter 1 cup white sugar 1 cup brown sugar 1/2 cup milk 1/2 tsp. maple flavoring 3 to 4 cups quick-cooking oats (depends on moistness) 1/2 to 1 cup coconut flakes (optional) 1/2 to 1 cup crisp rice cereal (optional) Melt butter and mix in sugars, milk and maple together bringing to a boil. Boil for 1 1/2 minutes. Pour over oats and coconut or rice cereal and mix well. If too moist, add more oats until it holds shape. Scoop or spoon onto waxed paper and let set up.
