POTATO SALAD 
8 lb. new potatoes
1/2 lb. bacon
2 c. mayonnaise
1 c. sour cream
1/2 c. butter
1 med. onion, chopped
6 tsp. Dijon rough mustard

Thoroughly wash potatoes. Boil whole unpeeled potatoes. Potatoes should be firm and not overcooked. Cube potatoes with peel still on. Saute onion in butter until tender. Remove from heat and add mayonnaise, sour cream and mustard. Mix well. Fold in potatoes and chopped crispy bacon, leaving some bacon for garnish. Do not over stir as it will break potatoes up. Sprinkle with remaining bacon. Serve hot or cold.
