INDIAN STYLE TURKEY 
2 c. yams
1 c. onion
1/2 c. celery
2 cloves garlic
2 c. chicken broth
1 lb. skinless turkey breast, cut up
1/4 tsp. ginger
1/8 tsp. thyme
1 tbsp. curry powder
2 tbsp. lemon juice
2 tbsp. apricot preserves
1/3 c. raisins
1/3 c. dried apricots, diced
3/4 c. green peas

Steam yams about 15 minutes. In large skillet, combine onion, celery, garlic with 2 tablespoons broth. Saute, stirring frequently, 3-5 minutes until onion begins to color and liquid evaporated. Add turkey and stir fry 5 minutes longer or until turkey is no longer pink.

In a medium bowl, mix seasonings, lemon juice, yams, preserves, raisins, apricots, and remaining broth. Add to skillet. bring to simmer. Cook on low 35 minutes. Stir in peas, cook 5 minutes longer.
