CHILI (RUM DUM) | |
1 tbsp. salad oil 2 med. onions, chopped 2 cloves minced garlic 3 lbs. coarsely ground chuck 2 tbsp. chili powder 1/2 tsp. dried oregano 1 tsp. salt 1/2 c. dark rum 1 (6 oz.) can tomato paste 1 (28 oz.) can tomatoes 3 (16 oz.) cans drained kidney beans Heat oil in an 8 quart pot. Lightly saute onion and garlic. Add meat, breaking up and stirring with wooden spoon until color changes. Add remaining ingredients. Cover and simmer 2 hours, stirring now and then. Check for seasoning. Yield: 10. |
