GRATED SWEET POTATO PUDDING | |
4 c. grated sweet potatoes 1 c. cane syrup 1/2 c. sugar 1 c. milk 1/2 c. butter 3 eggs 1/2 c. chopped nuts 1 c. raisins 1 tsp. cinnamon 1 tsp. allspice 1/2 tsp. ground cloves Melt butter in heavy oven proof skillet. Mix all ingredients together. Pour mixture into butter. Stir until heated. Put skillet in 350 degree oven and bake. When crusted around edge and top, turn over and let crust form again, allowing the second crust to form on sides and top, about 40 minutes. Serve with ice cream or Cool Whip. |
