CHICKEN CACCIATORE 
1/4 c. oil
2 lbs. chicken pieces
1 c. sliced onion
1/2 c. chopped green pepper
1 med. clove garlic, minced
1 lg. can tomato sauce
1 tbsp. parsley
1/2 tsp. oregano
1/4 tsp. thyme
3/4 tsp. salt
Dash pepper
1/4 lb. mushrooms

Heat oil in large skillet. Add chicken pieces and brown well; remove and set aside. Add onion, green pepper and garlic; cook until onion is tender. Add tomato sauce and all spices; stir to mix well. Add chicken pieces, cover and cook over low heat 45 minutes, stir occasionally. Add mushrooms and serve over cooked spaghetti or hot fluffy rice.
