FILLET OF SOLE - GENOA STYLE 
1 1/2 lbs. fillet of sole
5 tbsp. oil
1 c. tomato juice
3/4 c. bread crumbs
1 tbsp. oregano
2 sprigs of Italian parsley, minced
Salt & pepper
Juice of 1 lemon

Clean and wash fish. Grease a baking dish with oil. Lay fillets in bottom of dish. Pour tomato juice around them. Combine remaining ingredients, except lemon and sprinkle over fish. Bake in 350 degree oven until fish flakes easily, about 15 to 20 minutes. Sprinkle fillets with lemon juice.
