EGGPLANT AND GROUND BEEF 
1 lb. ground beef
4 tbsp. vegetable oil
2 tbsp. butter
1 sm. eggplant, cubed
3 med. chopped onions
1 garlic cloves
2 c. cooked macaroni
2 c. canned tomatoes
1/2 tsp. salt
Black pepper to taste

In large skillet, cook meat, stirring until brown. Drain fat and set meat aside. Heat butter in same skillet and to this, add eggplant and onions. Stir until brown. Return meat to pan and add remaining ingredients. Cook slowly until done.
