GRILLED POULTRY 
4 Rock Cornish game hens or 1-2 chickens (whole)
1/4 c. lemon juice
1/4 c. olive oil
2 cloves garlic, minced
1/2 tsp. dried thyme
1/2 bay leaf
1 tsp. rosemary
1/2 tsp. salt

Flatten game hens or chicken, removing backbone and breastbone. Combine the other ingredients and pour over poultry. Marinate at least 2 hours. Grill, basting with marinade, for 30-40 minutes. (A chicken will take a little longer.) The results are a golden hen with great flavor that is very low fat.
