SAUSAGE AND RICE CASSEROLE 
1 c. sausage (1/2 lb.)
3 tbsp. butter
1/2 - 3/4 c. raw rice
1 med. onion, chopped
1/2 c. celery, diced
1 can beef consomme

Brown meat, drain off excess fat and place in casserole dish. Brown rice, onion and celery in butter. Add to sausage and mix. Add 1 can of beef consomme and 1/4 to 1/2 can of water and cover; Bake at 350 degrees until liquid is absorbed and rice is fluffy. Add more water if needed. Cook 45 minutes to 1 hour.
