COTTAGE CHEESE DROP COOKIES 
1 3/4 c. sifted all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1/2 c. cottage cheese
1 c. granulated sugar
1 egg
1/2 tsp. vanilla extract
1/4 tsp. lemon extract
1/2 c. chopped candied pineapple
Candied cherries, halved

Start heating oven to 375 degrees. Grease cookie sheet. Sift together flour, soda, salt.

With spoon, mix butter with cottage cheese and sugar until very light and fluffy; now beat in egg and extracts, then flour mixture in fourths. Stir in pineapple.

Drop by teaspoonfuls, 2 inches apart, on cookie sheet. Top each, if desired, with cherry half. Bake 10 to 12 minutes. Makes 3 1/2 dozen.
