GNOCCHI 
3 lbs. boiled potatoes
1 tsp. salt
2 c. flour
6 egg yolks
Your sauce

Mash potatoes while warm. Cool and then add salt, flour, and egg yolks. Add more flour, if needed. Turn on floured board and knead. Cut in 3/4 inch pieces. Boil water and add a few pieces of dough at a time. After all float to top, cook 2 minutes. Drain. Serve with tomato sauce.
