PHYLLIS' CHILI | |
1 1/2 lbs. ground chuck 1 bell pepper 2 cans Bush's pinto beans, drained Salt & pepper to taste 1 lg. onion 1 can tomato juice Williams Chili seasoning Saute onion and bell pepper in small amount of oil until tender. Put in ground chuck and brown until done. Salt and pepper at this stage. Add tomato juice, beans, and chili seasoning. Simmer slowly for about an hour. I also put in about 1/2 teaspoon of cumin seed and 2 or 3 dashes of ketchup. I use at least 1 packet of chili seasoning, sometimes 1 1/2, depending on how spicy you like it. This chili is much better made one day ahead. Add ketchup just before serving. |
