CARROT NUT CAKE 
1 lb. raw carrots
1 1/2 c. vegetable oil
4 eggs
2 c. sugar
1 1/2 tsp. cinnamon
1 tsp. salt
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
3/4 c. walnuts, chopped
1/2 c. raisins

Grate carrots. Mix together oil, eggs, sugar, cinnamon and salt. Add grated carrots, combine dry ingredients and add to carrot mixture. Mix thoroughly. Pour into greased and floured Bundt pan. Bake at 325 degrees for 1 hour or until done. Frost with 3 ounce cream cheese and confectioners sugar and vanilla.
