ROAST PORK 
4 lb. pork loin roast
1/2 c. prepared mustard
1/2 c. brown sugar

Preheat the oven to 375 degrees. Place the pork roast, making sure that the fat side is up, in a shallow baking pan.

Using your hands, gently pat the mustard over the top of roast. Then sprinkle the brown sugar over the mustard.

Bake the pork for 2 hours or until it is beginning to become fork tender. Transfer the roast to a serving platter; let it stand for about 15 minutes before carving.

Garnish with fresh herbs, if desired. Serves 6.
