HUSH PUPPIES | |
1 1/2 c. white cornmeal 1/2 c. flour 1 tbsp. baking powder 3 tbsp. cajun seasoning 1 sm. onion, finely grated 2 cloves garlic, minced 2 eggs, beaten 1 c. milk 2 tbsp. butter Peanut oil for frying Combine cornmeal, flour, baking powder and cajun seasoning. Blend in onion and garlic. Beat eggs with a fork, then add beaten eggs to cornmeal mixture. Heat milk and butter until butter melts. Remove from heat and add to cornmeal-egg mixture. Blend well. Refrigerate for 1 hour. Heat oil in a deep fryer or heavy 4 quart saucepan. You will need at least 4" of oil. Heat oven to 350 degrees. Carefully, drop hush puppy batter by the tablespoonfuls into the hot oil, a few tablespoons at a time. Fry hush puppies until golden brown on both sides. About 2 minutes. Drain on paper towels. |
