FRUITY COFFEE CAKE | |
1 c. softened butter 1 3/4 c. granulated sugar 4 eggs 1 tsp. vanilla and/or almond flavoring 3 c. sifted flour 1/2 tsp. salt 1 1/2 tsp. baking powder 1 can pie filling (cherry, peach, apple, apricot, strawberry, or blueberry) Cream butter until fluffy; add sugar and continue beating. Add eggs one at a time, beating after each one. Add all remaining ingredients in the order listed, except the pie filling. Reserve 1 cup of this batter; spread remaining batter in an 11 1/2 x 15 1/2 inch jelly roll pan that has been greased. Drop dollops of pie filling on top, and top with remaining cup of batter. Bake at 350 degrees for 30 minutes. Cool slightly and drizzle with powdered sugar icing on top. |
