POTATO SALAD 
5 lb. potatoes, boil with skins on until done (but not overdone)
Dressing (recipe below)
6 hard cooked eggs
2 med. onions, chopped
1 c. chopped celery
1 med. carrot, grated
Parsley or dill to taste (adds color)

Peel potatoes and eggs; set aside. Mix onions, celery, carrot and parsley or dill. Mix with dressing. Add potatoes and eggs.

DRESSING:

1/3 c. mayonnaise
1 tbsp. vinegar
2 tsp. sugar
1/2 tsp. celery seed
1 tsp. (wet) mustard
5.33 oz. can evaporated milk

Mix above ingredients together.
