MANGO BREAD 
1 3/4 c. diced mango
3/4 c. oil
3 eggs, beaten
1 c. granulated sugar
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
2 c. flour

Sift flour, salt, soda and cinnamon and sugar. Make a "well" in the center. Add the beaten eggs, oil and mango. Stir well. Bake in a loaf pan on the middle rack in an oven which has been preheated to 350 degrees for 50 minutes.

Then, bake at 250 degrees for 15 minutes more. Cool. Serve plain or buttered.
