PINEAPPLE CAKE | |
2 eggs, beaten 1 1/2 c. sugar 1/2 c. oil 2 c. flour 2 tsp. baking soda 1/2 tsp. salt 1/2 of lg. can crushed pineapple with juice (approximately 1 c.) Preheat oven to 350 degrees. Beat eggs, sugar, oil and dry ingredients. Stir in pineapple and juice. Bake 30-40 minutes. ICING FOR PINEAPPLE CAKE: 1 c. sugar 1 stick butter 2/3 c. Milnot Boil 5 minutes - will be a thin gravy consistency. Remove from heat. 1 c. pecans 1 c. coconut Add these 2 ingredients to icing mixture - stir. Make holes with toothpick in cake - pour icing on cake while still warm. (Viv's Mom) |
