1 lb. ground beef 2 tbsp. ice water 2 tbsp. taco seasoning mix FILLING: 2 c. dairy sour cream 1 1/23 c. crushed tortilla chips 4 tbsp. taco sauce 1/2 c. chopped ripe olives 8 oz. grated cheddar cheese Preheat oven to 425 degrees. Mix beef, water, and taco seasoning until well blended. Press on bottom and up sides of miniature muffin cups. Set aside. Stir sour cream, chips, taco sauce and olives together. Spoon into the unbaked meat shells, mounding slightly. Sprinkle with cheese. Bake 7-8 minutes. Remove from pans with knife tip. These may also be made in regular muffin tins and served as an entree. Serve hot. Makes 2 dozen of the miniatures. |
