OVEN BARBECUED CHICKEN | |
Approximately 16 to 20 pieces chicken 1 med. onion, chopped (1/2 c.) 2 tbsp. butter 1 c. catsup 1/2 c. cider vinegar 3 tbsp. light brown sugar 1/4 tsp. pepper Preheat oven to 375 degrees. Place chicken, skin side up, on a rack in a large shallow roasting pan. Bake for 30 minutes. Saute onion in butter in saucepan until golden, 5 minutes. Add catsup, vinegar, sugar and pepper, bring to boiling; lower heat; simmer 5 minutes. Remove chicken from oven; turn pieces skin-side down. Spoon some sauce over; bake 15 minutes. Turn pieces skin-side up; spoon some sauce over; bake 15 minutes more. Spoon remaining sauce over chicken; bake 15 minutes. Increase oven heat to hot 425 degrees; cook chicken 10 minutes more. Serve hot with potato salad and/or cole slaw, if you wish. Serves 8. |
