SCALLOPED POTATOES & FRANKS | |
12 to 16 hot dogs 10 c. potatoes, sliced 6 tbsp. butter 1 1/2 c. onion, chopped 1/4 c. flour 3 tsp. salt 1/4 tsp. pepper 1/4 tsp. paprika 4 c. milk (or more, if needed) 2 c. Swiss cheese, shredded 4 tbsp. parsley, chopped Melt butter. Add onions; cook until tender. Stir in flour, salt, pepper and paprika. Gradually add milk; cook over medium heat, stirring constantly, until thickened. Remove from heat. Stir in cheese and parsley until cheese is melted. If necessary, return to low heat to melt cheese. Layer 1/2 of potatoes and hot dogs in casserole; add 1/2 of sauce. Repeat. Cover and bake 2 1/2 hours, or until potatoes are tender. |
