"LITE" FRENCH CHICKEN | |
3 1/2 lbs. chicken parts 1-2 lg. tomatoes, sliced 4-5 yellow squash or zucchini, sliced 2-3 potatoes, unpeeled, sliced 1 lg. green pepper, sliced thin 1 lg. onion, sliced thin Divide chicken, potatoes and vegetables into 2 to 3 equal piles on squares of aluminum foil. Sprinkle with sweet basil, garlic salt and pepper if desired. Dish will taste slightly sweet due to tomatoes, onions and peppers. Roll up each section of aluminum foil and put in large baking pan. Bake at 400 degrees for 1 to 1 1/2 hours. Will serve 2 to 3 depending upon appetite. NOTE: To lower calories and fat even further, remove chicken skin before baking. Chicken will be slightly drier, but good. A little white wine will help moisten and add different flavor. |
