BANANA OATMEAL COOKIES | |
1 1/2 c. flour 1 c. sugar 1/2 tsp. baking soda 1 tsp. salt 1/4 tsp. nutmeg 3/4 tsp. cinnamon 3/4 c. shortening 1 egg, well beaten (or substitute) 1 c. mashed ripe bananas 1 3/4 c. rolled quick oats 1/2 c. nuts Sift flour, sugar, baking soda, salt, nutmeg and cinnamon together into mixing bowl. Cut in shortening. Add egg, banana, rolled oats and nuts. Beat until thoroughly blended. Drop by teaspoonfuls, about 1 1/2 inches apart onto ungreased cookie pans. Bake in moderately hot 400 degree oven for about 15 minutes or until cookies are done. Remove from pan immediately. Makes about 3 1/2 dozen. P.S. I use Egg Beaters in all my recipes and use as much cocoa as possible instead of the solid chocolate. I also omit all salt and the recipe are good. |
