LO FAT CHOCOLATE CAKE | |
1 1/2 c. sugar 1 3/4 c. flour 3/4 c. cocoa powder 1 1/2 tsp. baking soda 1 1/2 tsp. baking powder 4 egg whites 1 c. nonfat milk 1/2 c. applesauce 2 tsp. vanilla 1 c. water, boiling FROSTING: 4 tbsp. butter 2 tbsp. plain lowfat yogurt 1/2 c. cocoa powder 2 c. powdered milk 1 tbsp. nonfat milk 2 tsp. vanilla Preheat oven to 350 degrees. Using a nonstick spray, grease and lightly flour one rectangular cake pan. Combine the dry ingredients, then add egg whites, milk, applesauce and vanilla. Mix on medium speed for 2 minutes and stir in the boiling water. Pour thin batter into cake pan and bake 35-40 minutes. Cool completely before frosting. To make frosting: Cream butter and yogurt, adding cocoa and sugar alternately with milk until you get desired consistency. Add vanilla. You may need more milk than the recipe calls for. |
