CANNED PEARS | |
1 qt. water 30 packets Equal, table top sweetener, sweetened with Nutra-sweet brand sweetener 6 lb. fresh pears 6 (1 pt.) canning jars Ascorbic acid Use jars with two piece lids and prepare according to directions. Wash, drain, core, pare and cut pears into quarters. Treat to prevent darkening with ascorbic acid, if necessary. Powdered drink mix (containing vitamin C or ascorbic acid) with Nutra-sweet may be used if regular ascorbic acid is not available. Drain. Place pears in hot jars, leaving 1/2 inch at the top. Heat water to boiling. Remove from heat and add Equal. Cover pears with syrup leaving 1/2 inch head space. Allow 2/3 cup syrup per pint jars. Adjust lids and rings. Process pints 25 minutes in boiling water bath. Remove immediately after processing. Store in a very cool place or refrigerate. Yields 24 servings, (3 quarts). Approximately 55 calories. Diabetic exchange: 1 fruit. |
