GREEN POTATOES 
4 lg. Idaho potatoes
1 c. plain lowfat yogurt
Salt & freshly ground pepper to taste
Flowerettes from 1 sm. bunch of broccoli
1/2 c. Cheddar cheese, grated

Bake potatoes in 375 degree oven until tender; 40 to 45 minutes. While potatoes bake, steam broccoli in steamer basket over 1 inch boiling water in covered saucepan until tender; 7 to 10 minutes. Partly cool broccoli finely chop or whip in blender. When potatoes are baked, slice in half lengthwise; scoop out center of potatoes leaving a 1/4 inch shell. Mash potatoes with yogurt and season to taste. Add broccoli. Mound potato mixture into shells and sprinkle with cheese. Return to oven and bake until melted; 5 to 15 minutes (25 to 30 if potatoes are cold). Serves 8.
