SOUR CREAM ENCHILADAS 
2 doz. corn tortillas
1 can diced green chilies
2 c. diced green onions
1 lb. Cheddar cheese, grated
1 lb. Jack cheese, grated
1 pkg. cottage cheese
1 pkg. sour cream
1 pkg. Lipton onion soup
4 cans sm. tomato sauce
2 med. cans reg. enchilada sauce

Mix onion soup, cottage cheese and sour cream together; let sit. Soften tortillas (I use microwave). Put large spoonful of cottage cheese mixture, a bit of diced chili, bit of onions and pinch of each kind of cheese. Roll up and place in large baking pan. Continue until pan is full.

Since microwave ovens vary in power, you may need to adjust your cooking time.
