POTATO CANDY 
1 small potato
1 (2 lb.) box powdered sugar (10x)
1 small jar peanut butter
1 tsp. vanilla
1 tsp. salt

Boil potato until done. Peel and mash well. Mix powdered sugar with potato until it is thick enough to roll out (takes about one pound). Sprinkle dough board with powdered sugar or on long piece of wax paper. Roll dough out thin and spread peanut butter. Roll up, wrap in wax paper and refrigerate until cool enough to slice. In memory of Gertrude Linton, my grandmother.
