LEMON PEPPER CHICKEN 
1 or 2 pkgs. boneless chicken fillets
butter (light)
Lemon pepper
Chopped basil
Garlic powder or salt
1 or 2 pkgs. frozen vegetables

Melt butter in a skillet and lightly brown chicken until tender, adding lemon pepper, basil, and garlic to taste. Turn until all sides have been browned and coated with seasonings. Turn heat onto medium and add your favorite frozen vegetables (we like mixed carrots, cauliflower and Brussel sprouts). Cover and simmer for about 10 minutes. Stir vegetables to coat with seasonings, then cover and simmer about 10 to 15 minutes longer.

Serve with rice or a boxes cheese pasta dish. Sprinkle with Parmesan cheese for extra taste.
