PEPPER JELLY 
2 c. sweet peppers, chopped (remove seed)
1 to 2 hot peppers, chopped (remove seed)
6 1/2 c. sugar
1 bottle or 2 pkg. Certo
1 tsp. salt
1 1/2 c. vinegar

Bring sugar, vinegar and salt to a hard boil. Boil 1 minute. Add peppers; boil 1 more minute. Remove from heat and add Certo. Return to heat and boil 1 more minute. Add green food coloring and spoon into jars. You may substitute 1 teaspoon cayenne if you do not have hot pepper. Recipe makes 8 small jelly jars.

NOTE: You may half this recipe. And you can omit hot peppers or cayenne if you do not like it hot.
