PEANUTTY APPLE SALAD 
3 c. chopped apples, skinned
1 tbsp. lemon juice
1 c. celery

Toss first 3 ingredients in a bowl.

1/2 c. low-fat plain yogurt
1/4 c. peanut butter
2 tbsp. apple juice
1/2 tsp. vanilla extract
1/8 tsp. cinnamon

Combine above 5 ingredients in a bowl and whisk until well blended. Add mixture to apples and celery. Toss until well coated. Chill for 1-2 hours and serve on a bed of lettuce.
