DEEP-FRIED MUSSEL MEATS 
8 oz. mussel meats
3 eggs, beaten
2-3 c. soft bread crumbs
Vegetable oil for deep frying
Parsley
2 lemons, quartered
Cocktail sauce and tartar sauce

Dip meats in beaten egg and then in bread crumbs (or use a prepared fish or clam batter or tempura mix). Fry in deep fat at 375 degrees until golden brown. Drain on absorbent paper and serve on a hot serving platter. Garnish with parsley and lemon quarters. Serve cocktail and tartar sauces on the side.

Serves 2.
