FRANCES'S ITALIAN CREAM CAKE | |
2 c. sugar 1/2 c. Crisco 1 tsp. vanilla 1/2 tsp. baking soda 1 c. coconut 1 stick butter 5 eggs, separated Salt 1 c. buttermilk 1 c. broken nuts Cream sugar, butter, and Crisco together until fluffy. Add egg yolks, one at a time. Add vanilla; sift together the flour, salt, and soda. Add alternately with above mixture. Add buttermilk; stir in coconut and nuts. Fold in beaten egg whites. Cook in 3 greased 9 inch pans at 325 degrees for about 40 minutes. FROSTING: 1 (8 oz.) pkg. cream cheese 1 box confectioners' sugar 2 tbsp. milk (if needed) 1 stick butter 1 tsp. vanilla |
