DIABETIC COCONUT PIE THAT MAKES
ITS OWN CRUST
 
4 eggs, well beaten
1/2 c. self rising flour
1 1/2 c. fructose
1/2 stick butter, melted
2 tsp. vanilla
3 c. milk
1 can coconut

Mix all ingredients. Pour in pie plates. Bake at 325 degrees for 30 minutes or until brown. Makes 2 pies.
