HOT RICE SALAD 
1 (6 oz.) box UNCLE BEN'S® long grain and wild rice prepared
6 slices bacon, fired crisp and crumbled.
1 c. celery sliced
1/2 c. sliced radishes
1/2 c. sliced water chesnuts
1/2 c. finely sliced green onions
1 head Romaine broken in pieces

Cook rice and cool until warm. Mix greens and vegetables. Make sauce.

SAUCE:

3 tbsp. bacon drippings
1 1/2 tsp. salt
1/4 c. vinegar
1 tbsp. flour
1 tbsp. sugar

Heat and cook sauce until thickened. Combine all salad ingredients, add warm rice. Pour hot dressing over all, serve immediately. Serves 6.
