ZUCCHINI FUDGE CAKE 
4 eggs
2 1/4 c. sugar
3/4 c. softened butter
3 c. flour
1/2 c. cocoa
2 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1 c. buttermilk
3 c. shredded zucchini
1 c. walnuts
1/2 tsp. vanilla

Beat eggs until fluffy; add eggs gradually until thick. Beat in vanilla and butter until smooth. Fold in zucchini. Bake at 350 degrees for 25-30 minutes. Makes four 9-inch cakes.
