GUMBO STEW 
2 c. cooked chicken meat
1 lg. can stewed or crushed tomatoes
3 stalks celery
1 med. onion
1 med. pepper
1 c. mushrooms, sliced
2 c. chicken broth
1 1/4 c. rice (long grain)
2 tbsp. olive oil
Fresh garlic to taste

Saute garlic, onion, celery, pepper and mushrooms in oil. Add rest and simmer 1/2 hour. Add spices to taste.
