LIVER AND ONIONS 
1 lb. beef liver
4 lg. onions
Salt, pepper, flour, oil

Pound meat with mallet and flour. Chop onions. Place oil in heavy skillet with tight fitting lid. Place onions in pan about 2 inches deep. Place liver on the onions. Cook and simmer until onions and liver are very tender, juicy and brown. Salt and pepper to taste.
