"PIG OUT" SALAD 
1 bunch Romaine lettuce
2 c. cooked chicken, turkey or tuna
1 cucumber (unpeeled, cut in sm. cubes)
1 green pepper, diced
1 red pepper, diced
1 sm. red onion, diced
1/2 lb. bacon (cooked and crumbled)
2 tomatoes, chopped
1/4 lb. fresh mushrooms, sliced
1 lg. avocado, sliced
1/4 c. chopped nuts

In a large bowl shred/tear lettuce. Put in bottom of bowl. Add a layer of chicken, turkey or tuna. Combine cucumber, peppers, onion and tomatoes. Layer on top of meat.

Add crumbled bacon (sprinkle over vegetables). Top with avocado and mushrooms (arrange to decorate). Sprinkle with nuts.

Top with Creamy Italian or favorite dressing.

CREAMY ITALIAN DRESSING:

1 c. mayonnaise
1/4 c. wine vinegar
1/8 tsp. garlic powder
1 tsp. sugar
1/8 tsp. pepper
Thyme, celery, salt, etc.
1 c. sour cream
1 tsp. mixed herbs (Italian)
3 tbsp. Parmesan cheese
1/4 tsp. parsley

Combine and thoroughly blend all ingredients. Cover and chill at least 1 hour. Makes 2 1/2 cups. (May blend in blender 10-15 seconds.)
