GUACAMOLE 
3 ripe avocados, peeled & pitted
1 med. onion, finely chopped
1 green chili pepper, finely chopped
1 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. pepper
1 med. tomato, peeled & finely chopped

Mash avocados; add onion, peppers, lemon juice, salt, pepper and mix well until creamy. Gently fold in tomatoes, cover and refrigerate until served. Makes about 2 cups.
