LENTIL SOUP 
1 c. green lentils
1 tbsp. oil
1 sliced onion
1 sliced celery stalk
1 sliced carrot
3/4 c. diced potatoes
5 c. water
1 bay leaf
1/4 tsp. salt
2 tsp. soy sauce

On medium heat add oil and sliced onion, celery and carrot, cook until onion is translucent. Add the remaining ingredients and bring to a boil. Reduce heat and simmer for 40 minutes. Add the soy sauce just prior to the end of the 40 minutes. Can be frozen. Serves 6.
