DIJON CHICKEN 
4 chicken breasts or thighs
1/2 c. Dijon mustard
Italian bread crumbs
1/4 c. butter
2 tbsp. lemon juice
2 tbsp. water
Paprika

Brush chicken with Dijon mustard; cover completely with bread crumbs. Place in pan. Combine butter, lemon juice, and water. Cover chicken with mixture; pour remainder in pan. Bake, covered, for 35 to 45 minutes at 350 degrees. Remove cover, sprinkle paprika, and bake an additional 15 minutes.
