SPINACH RICOTTA TART 
1 pie shell

1 sm. onion, minced

2 pkgs. spinach (10 oz. each)

3 eggs, slightly beaten
1 carton ricotta (or cottage) cheese (15 oz.)
1 c.light cream or milk
1/2 c. Parmesan cheese
1/2 tsp. salt
1/4 tsp. nutmeg
Dash of pepper

Add spinach and onion. Pour into baked pastry shell. Bake at 350 degrees for 50 minutes or until browned and set. Serve with tossed salad and cornbread.
