TACO SALAD 
1 lb. ground beef or turkey
1 onion
1 (15 oz.) can kidney beans
1 lg. head lettuce
2-4 tomatoes
8 oz. Cheddar cheese
8 oz. or more Thousand Island dressing
3/4 bag nacho chips, crushed

Brown and drain meat. Option to brown onions with meat or let raw in salad. Tear lettuce into bite sized pieces. Cut up tomatoes in small chunks. Add grated cheese and Thousand Island dressing. Toss lightly. Heat meat and beans, drain well and add to salad and toss again. Serve crushed chips in a bowl to be used as a topping. Great for hot summer meals. Serve immediately.
