SALAMI 
5 lb. ground beef
5 tbsp. Morton's Quick Tender Cure for meats
2 tsp. mustard seed
1 1/2 tsp. garlic powder
2 tsp. liquid smoke
2 1/2 tsp. salt
6 tsp. coarse black pepper
3 tsp. red pepper flakes or crushed red peppers

First Day: Mix well and refrigerate, covered.

Second Day: Work five minutes.

Third Day: Work five minutes.

Fourth Day: Work five minutes.

Fifth Day: Knead and form into rolls. Place on broiler tray and bake 8 hours at 170 degrees. Will be dark brown.
