APPLE FRITTERS 
3 lg. tart apples
2 tsp. lemon juice
3 tbsp. sugar
3/4 c. flour
1/4 tsp. salt
Few grains nutmeg
2 eggs, separated
2 tsp. melted butter
1/2 c. water
Powdered sugar

Core and pare the apples, then cut into 1/3 inch slices. Sprinkle with lemon juice and sugar and let stand in a cool place for a half hour.

Sift together flour, salt, and nutmeg. Make a hollow in center and into this put the egg yolks and half the water. Mix well; add remaining water gradually, beating hard to remove any lumps. Add melted butter; fold in stiffly beaten egg whites just before batter is to be used.
